At Sip we are all about the one-offs, the limited runs, the truly unique and exciting bottles that you can't find anywhere else. So, what better way to pay homage to this desire than with a case packed full of nothing but rare bottles – each hand selected and exceptional in its very own way.
1) Legras et Haas Exigence No9 Brut Nature
Only 96 bottles ever made, and these their very last! A blend of Chardonnay, from a perpetual reserve dating back to 1996 and pure 2014 Pinot Noir from Ay. Aside from the limited run, the super unique aspect is that these bottles were made Brut Nature solely for Sip!
The wine is exquisitely balanced, bringing a wonderfully generous front end full of juicy and accessible red fruits, along with a fresh and engaging mid palate that screams Chardonnay from the North of the Côte des Blancs. It is such a wonderful experience on the palate and one that you won't forget in a hurry.
2) Remi Leroy Blanc de Noirs 2010 en magnum
Talking of things you won't forget... Since 2009 Remi has been doing a very small run of magnums, which he reveals several years later to an expectant crowd. This, the second release, is a true blinder of a wine. Only 200 ever made and none left anywhere else in the world. We have the last handful of magnums! Brilliantly reductive and smoky, with a lovely layer of fruit and loads of cherry and spice. It carries the fruit so well and demands that you give it all your time. What a wine!
3) Caillez Lemaire 2002 Vinotheque
When you talk about rarity you can't get more exclusive and rare than this. A special disgorgement done, just for you à la volée (of course), in November 2020. With 17.5 years on the lees, on cork this wine explodes into life on both the nose and the palate.
It is so rare to capture a wine like this at such a magical moment, when it possesses all the brilliant freshness you expect from this epic vintage, coupled with 17 years of lees ageing, (where it acquires all those delicious autolytic flavours). These bottles were disgorged for you! No one else!
The wine? Delicately creamy upfront, with superb freshness, engaging energy and lift. The palate is perfectly fresh, with a mineral edge, followed by waves of lightly roasted nuts on a bed of toast. The finish is perfectly poised capturing your attention and taking you on a long and luxurious journey.
The wine is a blend of 60/30/10 Chardonnay/Pinot Noir/Meunier, vinfied in Oak with filtration. Importantly, the wine underwent its second fermentation on cork not cap.
