Formerly developed and marketed as Didier Herbert DH, this wine is created in the same inimitable style; purely from Chardonnay grapes, coming from vineyards in the Premier Cru and Grand Cru parcels of Mailly Champagne and Trois-Puits. Vinification takes places in 228L Burgundy barriques, with three years lees ageing. This is a precise and structured expression of chardonnay with light floral and herbal notes on the nose, followed by subtle toasted wood, hazelnut and almond. with aeration. The palate is direct and linear, driven by fresh fruit notes of pear and green apple, whilst barrel ageing brings texture and depth. The finish is long, saline and vibrant, marked by lime zest.
House Profile
Working alongside his father at Maison Didier Herbert, in 2016 Thomas Herbert began experimenting with developing his own specific cuvées. Originally sold under his family’s brand ‘Didier Herbert’ his ‘DH’ cuvées received praise for their incredible depth and power. Eight years on and he has now created his own independent brand to better represent the singular style of Champagnes he creates and his winemaking philosophy – terroir focussed with sustainable practices and low intervention at the heart.
