One of three wines, created from the same pure 2012 Chardonnay, but with differing levels of sugar. This is the driest of all three – steely and bracing! It's monstrously fresh and youthful and there is this impressive mid to late with a gushing amount of lemon pith and lime. Oyster shell, iodine, white pepper and lime juice. A solid 3 hours later and I'm just starting to get some notes of nougat, pastry and a touch of rich tea biscuit but still very much with the undercurrent of chalky bedrock and lemon.

Based in the village of Chouilly this fanastic maison run by Marcelline and Vincent create brilliant, crisp wines which are the perfect representation of the village. 11 generations of winemakers, the house in it's current status, was formed in 2002 and they work with over 10 hectares, mostly Chardonnay.
