A producer we fell in love with when we first tried their wines a few years ago, and, a producer that perfectly captures what Sip is all about; brilliant wines, tiny production, and a lovely human being. Fabien is the 10th generation winemaker in the family. Working with vines in Chatillon sur Marne, he creates precise and elegant wines with a lovely structure.

Gushing nose with plenty of richness and this underlying complexity and salinity. The first sip is surprisingly delicate and then this brilliance of fruit, almost chewy alongside a sweet exotic element and that salinity. Gosh this is good; so rich with this incredible complex nutty element which creates an added dimension that only a few producers are able to achieve. The carry through of sweet, toffee'd fruit is so delicious with chunks of sweet pineapple and a touch of salt to cap it off.

Amber, cherry gold. The nose is wonderfully concentrated – full of dark stewed wild strawberries with sweet oak and this lovely nutty, salty note going straight through it. The first sip is beautifully sensual; so elegant but it builds brilliantly giving texture and grip that I wasn't expecting. The finish is so long with loads of stewed strawberries, sweet cherries and smokey blackcurrants. The texture and creaminess of this is also brilliantly done, capturing this energy in your mouth.

God this nose is good; so sweet with notes of almond, sweet oak and pine nut.
The palate is brilliantly poised – the perfect balance of sweet and bitter. Energetic, rich, laser-like with this wonderful tropical sweetness piercing the finish. There's lemon curd, white pepper and toasted oak and the finish is so spot on and textural. Like all the great Champagnes there is a brilliant link between the oak and all that gorgeous fruit.

Sweet candied nose with a nice layer of rich tea biscuit. The palate is fresh with a vertical, almost chewy bitter note running through it. Clean citrus with a dash of tropical and, as it opens, there is a lovely fresh white apple flesh note to the mid palate which massively elongates the finish. Very fine!
