A complex blend of eleven vintages going back to 1995. Disgorged 10/19, with 3.14g/ltr. Really bright nose with loads of crisp green apple, with a hint of salt. The texture is fascinating. It's chewy and rich and you never lose sense of it. It has incredible length, but you sense this magnum is in need of time. After a few hours, it develops notes of celery, white flowers, gooseberry and white pepper. As it opens further, the texture leaps more to clementine pith, with faint hints of fudge. There is so much going on in the mid-to-late, that it's difficult to get it down in words, so juicy, so drinkable, we are going to struggle to hold on to them to see what happens with age.

One of the absolute gems of the village of Chouilly. Established in 1991 and run by the three brothers; Remi, Olivier and Jerome Legras, they work with 18 hectares in Chouilly alone and have holdings in Vitry, Les Riceys and Ay. Their range is all fantastic, with their wines ageing gracefully into their 3rd decade, but they are also pushing the boundaries with some fantastic single vineyard wines and a brilliant Chardonnay/Pinot Noir blend from Chouilly and Ay, with wines made from a blend of over 10 vintages.
