The nose shows an unbelievable freshness – little citrus notes sit alongside some floral notes and chalk. Smokey, toasty texture on the nose leads you down the path of what this wine will show. The entry is energetic, with fleshy, pithy notes that draw out this beautifully lined palate with loads of salinity and oyster shell with lemon. As it opens the complexity of the front end really develops with dark liquorice and marmite, white chocolate and a hint of nougat, followed by more lateral and loads more dried exotic grip.
House Profile
A wonderfully exciting new producer from the village of Beaunay, South of the Côte des Blancs. The Domaine was founded in the 1920s by Leon and Gabrielle Aubert. They started by working the vines and their children ended up developing the winery. The first press was put in by their child Pascal in the 1990s. Maxime came on board in 2012 and started to make his own wines in 2015 after the construction of their first cellar.
